Coconut Caramel Pecan Cookies

These Coconut Caramel Pecan Cookies are buttery, soft and have thick gooey, caramel loaded centers. The crunchy pecans and coconut flakes add the perfect texture and flavor to these. These can be mixed in one bowl in just a few minutes and take only 10 minutes to bake.

A little bit of science

These coconut cookies use melted butter in the cookie dough, which first of all, makes it easier to mix into the cookie dough, and secondly, it creates a fudgier cookie texture, rather than cakey. When you use softened butter, the air incorporated from mixing the softened butter and sugars creates air, which helps the cookies rise. Since this is no longer a factor in this cookie dough, the rise comes solely from the leavening agent.

These coconut cookies are easy to mix by hand, so you don’t have to worry about dragging out your handheld mixer or stand mixer. You just need a bowl and a whisk.

You’ll add melted butter, sugar, vanilla extract and the egg to a bowl, then whisk to combine. Next, you’ll add the dry ingredients and whisk just until combined. Add in the coconut flakes and pecans and use a wooden spoon or rubber spatula to gently fold into the cookie dough.

Scoop the cookie dough onto a parchment paper lined baking sheet. This recipe makes 10 cookies.

That’s it! Now, the coconut cookies are ready to bake.

These cookies take only 10 minutes to bake. They will be done when their edges are a light golden brown, so it could take an extra minute, but generally 10-11 minutes should do it.

These cookies don’t spread a ton in the oven. When they come out of the oven, you’ll use a flat rubber spatula and gently press the coconut cookies down. This helps to shape them into a nice, perfect circle.

Let them cool on the cookie sheet for a few minutes, then transfer to a wire cooling rack to finish cooling.

Ingredients

  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 3/4 teaspoon baking soda
  • 3/4 cup coconut flakes
  • 1/2 cup chopped pecans
  • Centers
  • 10 caramels

Instructions

1. Preheat oven to 350F. Line two baking sheets with parchment paper.

2. In a large bowl, add butter, sugar, egg and vanilla extract. Whisk to combine. Add in flour, cornstarch, and baking soda and whisk until just combined. Fold in coconut flakes and pecans with a wooden spoon or rubber spatula, just until combined.

3. Scoop 10 cookie dough balls onto prepared baking sheets.  Use your thumb to make an indent in the center of each cookie dough ball. Place caramel in the indent, then cover the caramel with the cookie dough/wrap the cookie dough around the caramel to seal.

4. Bake in preheated oven for 10-11 minutes. Flatten the cookies down after removing from the oven with a rubber spatula to make them thinner/larger.
